Gluten-free Chocolate Nut Butter Waffles

Ingredients:


⦁ 5 large eggs
⦁ 1 cup creamy almond butter (or cashew butter)
⦁ 2 teaspoons pure vanilla extract
⦁ ¾ cup water
⦁ ¼ cup coconut flour
⦁ ¼ cup unsweetened cocoa powder
⦁ ½ teaspoon baking soda
⦁ Coconut oil, for waffle iron


Directions:


1. Preheat waffle iron.
2. Put the eggs, nut butter, vanilla extract, and water in a large mixing bowl. Using a hand mixer, beat until the ingredients are combined.
3. In a separate mixing bowl, whisk together the coconut flour, cocoa powder, and baking soda until combined.
4. Using a spatula, fold the dry ingredients into the wet ingredients. Mix until the ingredients are well incorporated and the batter is smooth.
5. Lightly grease the waffle iron. Ladle the batter onto the waffle iron; the amount will vary by waffle iron. Consult the manufacturer's directions for the recommended amount.
6. Cook for 5 minutes or until the waffle iron stops steaming. Repeat the process until all the batter is used, re-greasing as needed.
